LOS ANGELES– Sustainability and luxury go hand-in-hand at Hyatt Regency Century Plaza Hotel on Los Angeles’ Avenue of the Stars. After hosting the Governors’ Global Climate Summit in 2009, the hotel has been on a journey towards sustainability.  Its new initiatives prove that small lifestyle changes alongside new technology can increase sustainability without compromising comfort.

This Los Angeles Hyatt’s glamorous dining area caters to politicians, business travelers, and vacationers with a menu full of sustainable options.  Cooks rely exclusively on farm-to-table cuisine—that is, only serving fresh and in-season food. The Hyatt is also doing its share to reduce food waste. This is an important issue as, according to the Environmental Protection Agency (EPA), 33 million tons of food waste was thrown away in 2010, making it the most significant source of landfill.

So what happens to food waste generated by the restaurant, banquet areas, room service and the employee cantina? The Hyatt puts the waste through a digester which uses bacteria to reduce it to water.  The digester was originally introduced on a trial basis, but the hotel “loved the technology so much and the impact it had on saving money while doing good for the environment that we kept it on permanently,” says Adrian De Vore, the hotel’s director of public relations.

Additionally, the Hyatt is encouraging recycling and energy efficiency.  Lights are turned off in unused rooms and on the banquet floors, recycling bins are conveniently located throughout the hotel and on every elevator landing, and waste materials are sorted prior to being picked up by waste services.
